I'm a twenty one year old Johnson and Wales University student, majoring in culinary nutrition. I was hired as an intern yet I never worked under a Chef or had any supervision while cooking. I was the only trained/certified cook in the kitchen. I was expected to supervise the other kitchen staff, make the menu, and cook dishes needed for each service. Out of the four women in the kitchen two of them were completely untrained and didn't have any knowledge of how to operate in the kitchen. Their short comings became my problem since I was the only trained and certified food handler. The kitchen is barley up to health code standards. It passed inspection only because of the work the kitchen staff put into it before the camp opened. As the campers came the equipment began to fail. This was blamed on the kitchen staff as well.
Before arriving to camp The Director Erika stated that their was reliable wifi for all to use. Yet when the interns arrived there was no wifi so assignments were unable to be turned in on time. Many weren't even able to talk to their parents from there lodging areas.
If you are interested in working at Camp Carysbrook be prepared to be under paid and worked to the fullest extent. Counselors mental and physical health aren't considered until they break down in front of campers. The director specifically is petty and immature. When problems arise she commonly states "it's not my problem," and avoids responsibilities." The owner is more level headed but often agrees with the director to avoid confrontation.
When the director and owner stopped believing in the kitchen staff they kicked the two managers out of the camp. Neglecting to contact our parents or school about our well being until days later. We were told to leave in the afternoon and given 6 hours to find lodging in a state we've never been to before and we not familiar with. They knew this and showed no remorse kicking us out. Refusing to allow us to stay 14 more hours until our parents came to pick us up. We were treated like criminals and followed around the camp until we left. This camp isn't diverse at all and they try to push progressiveness just to bring minorities into the camp. The two black staff members were rarely incorporated into evening program. When we were encouraged to attend it was for "diversity training." When they realize we have different needs compared to other campers/staff members we receive attitude and immaturity.
